Miso Soup with Joi Choi
Miso Soup with Joi Choi
Place chopped bok choi, scallions, and water or soup stock in
a pot and bring to a boil, then simmer five minutes. Stir a
few spoons of miso inot a cup of the soup broth, then stir
that mix back into the whole pot and serve garnished with
more scallions.
